Effectivement le bios (réglé en legacy) charge bien le live Ubuntu depuis ma clef USB.
Opération testée :
- Mettre le bios en legacy
- Lancer Ubuntu 20 depuis la clef USB
- Vérifier le répertoire /sys/firmware/efi => il n'existe pas => on est bien en legacy
- Réinstallation Ubuntu en écrasant l'installation précédente

Je tente un update-grub mais il m'envoi sur les roses.
En fouillant un peu sur le net je trouve un cas similaire. Je tente les commandes suivantes sous grub :

J'arrive sur un menu grub. A ma demande, ca boot sur Ubuntu correctement
Je tente un update-grub pour avoir la détection de l'OS. Ca marche.
Reboot, toujours le grub minimaliste, je retape les commandes et la je me retrouve sur Ubuntu sans passer pas le menu (ça sent pas bon).

If your computer reboots directly into Windows, try to change the boot order in your UEFI firmware.
If your UEFI firmware does not allow to change the boot order, change the default boot entry of the Windows bootloader.
